Jackfruit seed methi or fenugreek leaves curry recipe is a delicious and healthy curry. The recipe is vegan and glutenfree. It’s a no onion no garlic dish. Jackfruits are largest fruit in plant kingdom. Many delicious traditional dishes are prepared using ripe jackfruits. Usually the pulp is used and seeds are thrown away. But these jackfruit seeds are healthy and have many culinary uses.  In kannada we call this as halasina beeja. Jackfruit seeds are rich in thiamin and riboflavin. They are protein and iron rich seeds, loaded with micro nutrients and provide instant energy. It is an excellent source of fiber. These jackfruit seeds can be sundried, frozen and used when required during offseason.

I have paired methi or fenugreek leaves with jackfruit seeds which gives a distinct flavor to the curry. This side dish can be prepared during vrat. I have used fresh coconut and cashew to get the desired thickness. I have served it with chapati, but it can be served with rice or any glutenfree flat breads.

Here is the recipe of simple yet tasty curry from a healthy jackfruit seed.

Course: Curry / Side Dish

Cuisine: Karnataka

Preparation time: 5 mins

Cooking time: 20 mins

Serves: 4 nos

Ingredients:

Jackfruit seed pieces (deskinned and pressure cooked) – 1 cup

Methi or fenugreek leaves – ½ cup

Refined oil – 1 tbsp

Mustard seeds – ½ tsp

Cumin powder – ½ tsp

Garam masala powder – 1 tsp

Saunf or fennel powder – ¼ tsp

Turmeric powder – ¼ tsp

Lemon juice – 1 tsp

For masala

Coconut (grating) – ½ cup

Tomato – 1 big

Ginger pieces – 1 tsp

Asafoetida or hing – ½ tsp

Green chili – 2 nos

Cashew nuts (soaked) -2 tbsp

Water as required

Method:

  1. Take a mixer jar, grind grated coconut, tomato, ginger, asafoetida, green chili, soaked cashew. Make a fine paste and keep aside.
  2. Take a pan, add oil, mustard seeds, saute well. Add methi leaves and saute.
  3. Add ground paste, nicely fry the mixture.
  4. Add cumin powder, garam masala, saunf powder, mix well.
  5. Add salt, turmeric powder, pressure cooked jackfruit seeds.
  6. Add required quantity of water, cook until the curry thickens and jackfruit seeds absorb the masala.
  7. Add lemon juice, mix well. Serve hot with any Indian flat bread which can be even glutenfree.

My Notes:

For thickening of curry, soaked melon seeds can be used instead of cashew nuts.

Dried or fresh jackfruit seeds can be used.

Outer white skin of jackfruit seeds can be removed by crushing the seeds.

Mango chocochip ice cream is luscious, creamy and flavourful. Homemade icecream are always a pleasure to serve for loved ones. It’s healthy and free of preservatives. Mango and chocolate pair up very well. If you love mango and chocolate then you will love this. Mangoes the king of fruits is rich in dietary fibre, rich in antioxidants and boosts immunity, eye health. So this rich and creamy dessert is welcome on all occasions.

My family is crazy with mangoes and jackfruit, so it’s always a mango feast at home during the season. This year the season started so late I ended up preparing icecream in rainy season, well hot in the morning hours and cloudy during rest of the day. Serves: 4 nos

Ingredients:

Mango pieces (ripe) – 1 cup

Sugar – ½ cup

Milk powder – 2 tbsp

Fresh cream – 200ml (Amul 30% fat)

Chocochip – ¼ cup

Method:

  1. Take a blender add mango pieces, sugar and milk powder. Blend into fine paste.
  2. Take the thick part of fresh cream in chilled bowl placed on ice cubes, whip on high speed until soft peaks are formed.
  3. Add the mango mixture into the whipped cream. Pour in the chocochips, mix gently and pour this mixture into airtight container.
  4. Freeze for overnight and serve the chilled mango chocochip ice cream.

My Notes:

Adjust the sugar content depending on the sweetness of mango

Dark chocolate chunks can be added instead of chocochips.

Non-diary whipping cream can be used.

Any extra flavors like cardamom, kesar and nutmeg can be used.

Masala raw mango drink is a traditional seasonal drink from Karnataka during summers. It is also called as mavinakayi saaru, appekayi saru. Traditionally, in many regions of western ghats of Karnataka the recipe says to use aromatic raw mangoes called appekayi. Since we don’t get them easily in Bangalore, I have used raw mangoes from friends farm. More the tanginess and aroma of mangoes, better for this kind of drinks. This drink is a must during functions and this happens to be our family favourite too. Raw mangoes are cooked and seasoned with basic Indian spices. Something very much similar to this called aam panna is prepared during summers in North India. This recipe is very simple and can be relished during the summers with the flavours of mango.

Course: Appetizer / Drink

Cuisine: Karnataka

Preparation time: 5 mins

Cooking time: 15 mins

Serves: 4 nos

Ingredients:

Raw mango (deskinned) pieces – 1 cup

Jaggery – 2 to 3 tbsp

Salt as per taste

Water as required

Ice cubes as required

For seasoning:

Coconut oil – 1 tsp

Mustard seeds – ¼ tsp

Cumin or jeera- ¼ tsp

Curry leaves – 4-5 nos

Red chilies – 2 nos

Asafoetida or hing – ¼ tsp

Method:

  1. Pressure cook the deskinned raw mango pieces, jaggery and little salt.
  2. Cool the cooked raw mango pieces, grind this into fine paste. Keep this aside for further use.
  3. Heat a tadka pan on medium flame, add coconut oil, mustard seeds, sauté well. Now add cumin, fry well.
  4. Add curry leaves, red chillies; fry on low flame until they become crisp.
  5. At last add asafoetida and fry for few seconds. Cool the seasoning or tadka.
  6. Take a vessel, add raw mango paste, pour the seasoning on this. With fingers crush the seasoning nicely so that all the seasoning powders and blends well with the raw mango paste.
  7. Add required amount of water, adjust the salt and jaggery at this stage.
  8. Add ice cubes, mix and serve masala raw mango drink.

Coconut oil can be replaced with any refined oil

Red chilies can be replaced with green chilies

Almond / Badam Milk Kulfi Recipe – How to prepare almond milk Kulfi – Pavithra from Dice n Cook

Almond milk kulfi is a perfect refreshment during summers. I have already prepared it so many times in this summer. So thought of updating my blog with the recipe. Kulfi is a delicious traditional milk based dessert form of ice cream originating mainly from Indian sub-continent. Full fat milk is reduced to get the required texture and flavor. The thickened milk and sugar gives nice grainy texture to kulfi.

Almonds are rich in natural oil, proteins and vitamins. Almonds are power house of energy and these homemade kulfi are healthy option to all age groups. They can be made non-diabetic by using natural sweeteners like honey, maple syrup. Almond and cardamom makes great flavors. In this recipe I have used directly the almonds without soaking. Almonds are powdered with sugar directly and added to reduced milk. The recipe is very simple and just few hours of freezing gives a tasty, creamy kulfi to beat the summer heat.

Below is the detailed recipe

Course: Dessert

Cuisine: Indian

Preparation time: 5 mins

Cooking time: 8 hours

No of kulfi: 12 medium sized

Ingredients:

Thick milk (full fat milk) – ½ ltr + 1 tbsp

Corn flour – 2 tsp

Almond or Badam – 15 to 18 nos

Sugar- ¾ cup

Cardamom- 2 nos

Malai or fresh cream- 2 tbsp

Method:  

  1. Mix 1 tbsp milk and corn flour and keep this aside.
  2. Take a high speed blender or mixer, add sugar, badam and cardamom. Blend into fine powder. Keep aside.
  3. Take a thick bottom wok, heat milk on medium flame and start boiling. Keep stirring.
  4. When the volume reduces to 3/4 th or less, add sugar badam, cardamom mixture. Stir well.
  5. Add malai, corn flour milk paste to above and boil for little more time with stirring.
  6. Switch off the flame, allow the mixture to completely cool.
  7. Pour this thick badam milk mixture into the kulfi moulds and freeze the kulfi for 8 hours or until it sets.
  8. After the kulfi is set, take the moulds out and run under water for few seconds. Remove the kulfi from moulds and serve these delicious kulfi.

My Notes:

Continuous stirring is required to prevent the burning of milk at bottom of vessel.

Sugar can be replaced with cane sugar, brown sugar and jaggery powder.

Ice cream and ice cream with rising temperature in this part of the world. Homemade ice creams with infinite flavors are a welcome for hot summers. Homemade ice creams are always healthier option with no preservatives and artificial colours. And more on my family loves homemade ice creams. With full fledged summer vacations, last one month has been real storm in my kitchen with so many dishes and this apple cream cheese nutty ice cream recipe is one such creamy delight from my kitchen.

Apple cream cheese nutty ice cream is insanely delicious with blend of crunchy apple pieces and peanut brittles. Since long wanted to try my hands with homemade cream cheese and got a full proof recipe of my friend Shrikripa. Finally tried it and cream cheese is creamy soft, slightly tangy, sweetish with added salt to taste. So had to try this homemade cream cheese in my cooking. There are many recipes on social medias using cream cheese in ice cream, I have prepared this yummillious rich delicious ice cream in my own way. If you are a fan of cream cheese then this is a must try recipe. Adding nuts and choco chips gives a nice crunch to the ice cream. Had few peanut brittles in my pantry, so had no second thought, crushed it and added.

So here I am sharing the recipe of this apple cream cheese nutty ice cream which I prepared few days back, every bite has feeling of eating cheesecake.

Course: Dessert

Cuisine: International

Preparation time: 5 mins

Cooking time: 10 hrs

Serves: 5

Ingredients:

For cream cheese:

Full fat milk- ¾ ltr

Citric acid- ½ tsp

Thick curd – ¾ tbsp

Salt a pinch

Muslin cloth or fine mesh

For caramelized apple:

Apple cubes-1 cup

Sugar – 2 tbsp

Water – 2 tbsp

Lemon juice – 1 tsp

For ice cream:

Homemade cream cheese – 170 gm

Fresh cream (Amul chilled) – 250 ml

Condensed milk – 250gm

Icing sugar – 3 tbsp

Apples pieces (caramelized) – 1 cup

Peanut brittles or chikki crushed – ½ cup

Choco chips – ¼ cup

Ice cubes – 1 cup

Chilled steel bowl

Method:

Homemade cream cheese:

  1. Heat full fat milk in a vessel. As it starts to boil, add citric acid, mix gently until all the curdled mixture settles at the top leaving the whey behind.
  2. Remove the cheese or curdled mixture from whey by sieving through the muslin cloth.
  3. Remove the water content from the curdled mixture or cheese by hanging for 15 minutes.
  4. Now add thick curd to the above cheese, mix and churn using a food processor.
  5. Take this in muslin cloth and remove any excess water content from cheese by hanging for few minutes. I got 170gm of cream cheese.
  6. Store this cream cheese in refrigerator and use it when required. Stays good for 3 to 4 days when refrigerated.

Caramelized apple:

  1. Take a pan; add apple cubes, sugar and water. Heat the mixture.
  2. Add lemon juice, boil once as the syrup reduces and coats well to the apple pieces. Cool this caramelized apple cubes.

Ice cream:

  1. Take a bowl, beat cream cheese, add condensed milk and beat again until it becomes creamy or uniform mixture.
  2. Now add the caramelized apple mixture, crushed peanut brittles into the mixture.
  3. Whip the fresh cream on low speed for 2 minutes in a chilled vessel placed on ice cubes, add icing sugar slowly and beat at high speed, when the cream reaches soft peaks, refrigerate the whipped cream until use.
  4. Slowly add the refrigerated fresh whipped cream, chocochips to cream cheese mixture and gently mix everything.
  5. Pour this into airtight containers; freeze for 2 hours, after two hours mix everything gently. Freeze overnight or until the ice cream sets.

My Notes:

Store brought cream cheese can be used.

Any form of crushed nuts can be used instead of peanut brittles.

I have used quite big apple pieces instead very small pieces of apples can be used.

Ingredients:

Thick curd or yogurt -1 cup

Cinnamon powder- ¾ tsp

Cocoa powder- 1½ tbsp

Banana (ripe) – 2 medium

Sugar (powdered) – ½ cup

Grated chocolate- 3 tbsp

Banana slices- ¼ cup

Water as required

Method:

  1. Take a blender and add thick curd, cinnamon powder, cocoa powder, ripe banana, powdered sugar. Give a nice churn until its smooth
  2. Now pour this into a bowl, add banana slices, grated chocolate, water if required. Mix the lassi. Refrigerate the lassi.
  3. Pour this chilled chocolate banana lassi into short glasses, garnish with banana slices and chocolate gratings.

My Notes:

The quantity of cocoa powder can be reduced or increased. Always use a high quality cocoa powder as this forms the major flavor.

Choco chips can be added instead of chocolate gratings.

Banana cubes can be added instead of slices.

Fruit punch lassi is a super summer drink. Lassi is popular drink in many parts of India, it is basically a churned curd or yogurt, flavored with either sweet or savory masala. It can be plain churned curd or the blend of fruits to the traditional lassi. Flavors like cardamom, nutmeg, saffron can be used. It is thick, heavy and quite filling drink. I had few fruits in my refrigerator and wanted to clear them up, so churned it into this fruit punch lassi. Here is my version of making the lassi even healthier by adding combination of fruits rich in dietary fibre, potassium, antioxidants, flavonoids promoting healthy digestive tract. I have used custard apple, papaya, red apple and banana. This lassi can be served with breakfast, after lunch or dinner. This yogurt based fruit punch lassi has a soothing property on the digestive tract.

Course: Beverages

Cuisine: Indian/ Punjabi

Preparation time: 10 mins

Cooking time: 10 mins

Serves: 2 nos

Ingredients:

Custard apple – 2 big

Papaya pieces – ¾ cup

Red apple pieces – ½ cup

Banana – 2 medium

Yogurt (thick) or curd – 1 ½ cup

Honey – 2 tbsp

Cardamom powder – ½ tsp

Water as required

Method:

  1. Take a blender with sieve which can remove the residual seeds of custard apples and remove the pulp using this blender. Keep this aside for further use.
  2. Next take a high speed blender, add papaya pieces, red apple pieces, banana and puree these. Keep this aside.
  3. Now take a bowl, add yogurt, honey and churn using a wooden churner or wire whisk till honey blends well.
  4. Now add the cardamom powder, custard apple puree, other fruit puree, churn or mix once.
  5. Add water if required to adjust the consistency of lassi.
  6. Pour this fruit punch lassi into serving glass and serve it chilled or as it is.

Any fruit combination can be used.

Honey and cardamom can be adjusted as per taste.

Pulp from custard apple can be removed by hands and used directly.

The two gourd veggies I have used in this drink are ash gourd or winter melon and bottle gourd or lauki. Ash gourd contains 95% of water and this helps the body to be hydrated during summers. It has many other health benefits like antimicrobial activity against bad microbes in stomach and intestine, helps in weight loss, loaded with vitamins and minerals. Bottle gourd also has similar health benefits like helps in digestion, has cooling effect, helps in weight loss, lowers cholesterol. This drink is flavored with ginger, honey and lemon juice. It is so simple to prepare, let’s see the recipe of this incredibly beneficial summer gourd detox drink.

Ash gourd pieces (deskinned and without seeds) – ¾ cup

Bottle gourd pieces (deskinned and without seeds) – ½ cup

Salt as per taste

Water as required

Method:
1. Take a blender, add ash gourd pieces, bottle gourd pieces, ginger pieces and make fine paste.
2. Add honey, lemon juice, salt mix well.
3. Add water as required, pour into glasses and serve this healthy summer cooler.

Apple cinnamon detox drink, this healthy drink happens to be my blog first anniversary post, wanted to post something healthy as the motto of my blog is “cook eat smile live healthy”. Thank you everyone who supported and motivated in my food blogging journey, hope to continue posting healthy recipes in future too.

Detox water is water infused with flavours and beneficial properties which help to burn calories naturally and boost the immune system. Apple cinnamon detox drink is one such water infused with flavours of various healthy ingredients. I got to know about detox drink from an Ayurveda doctor who says that any fruit or veggie flavour can be infused into water and thus making it healthy.

Firstly the main ingredient apple rich in beneficial photochemical, minerals, flavonoids, fibre helps in detoxification process. The citrus lemon is packed with vitamin C and helps in building the immunity. Ginger helps in easy digestion; cinnamon has antioxidants and anti-inflammatory properties. Sweetness is infused with honey which naturally fights with microbes. Mint adds freshness to the water. Well so many healthy ingredients in one, these days I make it a point to have this detox drink once a week.

Preparation time: 5 mins

Cooking time: 7 hrs

Serves: 2

Ingredients:

Apple – 2 medium sized

Cinnamon -2 medium sized sticks

Mint or pudina leaves – ¼ cup

Ginger- 1 inch piece

Lemon- 1 medium

Honey – 2 tbsp.

Water- 500ml

Method:

  1. Cut apple and lemon into thin slices. Keep this aside.
  2. Take a glass bottle, add apple slices, cinnamon sticks, chopped mint leaves, ginger pieces, lemon slices.
  3. To the above add water, mix once, close and keep it aside for 6 to 7 hours.
  4. After 6 to 7 hours or incubation time, add honey, mix the infused water. Sieve the content and drink this apple cinnamon infused detox water empty stomach. This can be served chill or as it is.

My Notes:

The incubation period can be reduced to 2-3 hours and below method can be followed for reusing. The apple cinnamon mixture after sieving can be kept as it is in bottle, then fresh water can be added and incubated again. This method can be followed until the taste of detox water fades.

Sugar – 2 tbsp or as per taste

Water as required

Ice cubes as required for serving

Method:

  1. Take a blender or a food processor, add cucumber pieces, mint leaves, ginger pieces, black salt, little water and blend it to fine mixture.
  2. Strain this mixture and add required quantity of water to the strained liquid.
  3. Add lemon juice, sugar, honey, mix well and add some ice cubes.
  4. Cucumber mint drink is ready to be served.

My Notes:

Black salt or kala namak is optional, can be replaced with normal salt.

Sugar, honey can be adjusted as per taste. Sweetness can be adjusted with only honey.
